It tastes so good that I had to pause in the middle of eating lunch to post this.
Last night Becky made one of my favorite dishes, “tater tot casserole”. I don’t know the exact recipe, but I do know that it involves ground beef, cream of mushroom soup, cheddar cheese soup, and of course… tater tots. We had it for dinner, and there was enough left over for me to bring some in for work today.
I think that eating it has probably taken a couple of weeks off of my life, but oh… it’s worth it. Maybe Becky will be kind enough to post the complete recipe here later tonight.
We used to always have this in our college cafeteria. I think they still serve it but I haven’t been there in awhile.
They also have a concoction that is very similar called “Chicken Tortilla Casserole” that tastes similar. It involves chicken, tortillas, and lots of mushroom soup and cheese and spices. It’s very odd to have to fish out the tortilla pieces.
Okay, I know you’re all waiting with baited breath for this…
Tater-Tot Casserole:
1 Bag of Frozen Tater-tots
1 Can Cream of Mushroom Soup
1 Can Cheddar Cheese Soup
1-2 lbs. ground beef (I only use one)
diced onion
Brown the beef in a skillet and drain the fat. Add onions. Put into a 9×13 pan. Mix two soups together and spread over the meat. Then put a single layer of tater-tots on top. Cook for 1 hour in a 350 degree oven. yum
Is this recipe from my family? It looks strangely like the one we use? Otherwise, very good taste. 🙂
ummm. if your family sent recipe card to my bridal shower and wrote very nicely and underlined the name of the recipe in red ink…and also sent one in for Chocolate Cherry Bars… than, yes, it is quite possible that it is a Lyttle family recipe 🙂
